Sweet Potato Tacos

Ingredients:

● 2 large sweet potatoes, peeled and diced
● 1 tablespoon olive oil
● 1 teaspoon chili powder
● 1/2 teaspoon cumin
● 1/2 teaspoon smoked paprika
● 1/4 teaspoon garlic powder
● Salt and pepper, to taste
● 8 small corn tortillas
● 1 cup cooked black beans
● 1/2 cup crumbled feta cheese
● 1 avocado, diced
● 1/4 cup chopped fresh cilantro
● Lime wedges, for serving

Procedure:

1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the diced sweet potatoes with the olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until well coated.
3. Spread the sweet potatoes out on a baking sheet in a single layer, and roast them in the preheated oven for 20-25 minutes, stirring once or twice, until they are tender and lightly browned.
4. While the sweet potatoes are roasting, warm the tortillas in a dry skillet over medium-high heat for about 30 seconds on each side, until they are warm and lightly charred.
5. To assemble the tacos, divide the cooked sweet potatoes and black beans evenly among the tortillas. Top each taco with crumbled feta cheese, diced avocado, and chopped cilantro.
6. Serve the tacos immediately with lime wedges on the side.

Veggie Quesadillas

Ingredients:
● 8 small flour tortillas
● 1 red bell pepper, thinly sliced
● 1 green bell pepper, thinly sliced
● 1 onion, thinly sliced
● 1 zucchini, thinly sliced
● 2 cups shredded cheese
● 1 tablespoon olive oil
● Salt and pepper to taste
● Optional toppings: salsa, guacamole, sour cream

Procedure:

1. Heat olive oil in a large skillet over medium heat.
2. Add sliced bell peppers, onion, and zucchini to the skillet and season with salt and pepper. Cook for 5-7 minutes or until the veggies are tender.
3. Remove the veggies from the skillet and set aside.
4. Place one tortilla in the skillet and sprinkle shredded cheese on half of the tortilla.
5. Add a few spoonfuls of the cooked veggies on top of the cheese.
6. Fold the tortilla in half and press down gently with a spatula.
7. Cook for 2-3 minutes on each side, or until the cheese is melted and the tortilla is lightly browned.
8. Repeat with the remaining tortillas, cheese, and veggies.
9. Serve the quesadillas hot with your choice of toppings, such as salsa, guacamole, and sour cream.
